Preparation time: 10 mins

Servings: 3 persons

Ingredients:

  • 50g Ibémi Fonio

  • 35g sugar

  • 1/2L soy or almond milk

  • 1 vanilla pod

  • 4cl salted caramel, honey or marmalade for topping

  • 1 handful of raisins

  • 5cl of rum (optional)


Method:

  1. Place the raisins in a glass of rum to allow it to imbibe during the preparation.

  2. Boil the soy/almond milk.

  3. Add sugar, fonio and vanilla pod to the milk and mix for 5 to 6 minutes while stirring with a wooden spoon.

  4. Cook the mixture on low heat and keep stirring for further 6 minutes.

  5. Remove the pan from the heat and take out the vanilla pod.

  6. Remove the raisins from the rum.

  7. Pour honey / caramel / marmalade at the bottom of each verrine.

  8. Add the fonio milk in the glass and top with the raisins and/or honey / caramel / marmalade.
